Bagel Brunch French Toast Casserole

I ate this for breakfast however you could serve it as a dessert.

Preparation Time: 5 minutes plus overnight
Cooking Time: 50 minutes
Serves: 2

Ingredients
1 bagel
45 g or 3 wedges Laughing Cow cheese
2 small eggs
¼ cup milk
¼ tsp vanilla
1 tbsp maple syrup
1/8 cup chopped pecans
Cinnamon sugar

Method
  • Cut the bagels in half and spread the Laughing Cow cheese evenly over the two halves.

  • Cut each half into eights.


  • Place them in a small oven proof dish, that has been generously sprayed with cooking spray.

  • Mix together the eggs, milk, vanilla and maple syrup and pour over the bagels, and then sprinkle with the chopped pecans.


  • Cover the dish with foil, put in the fridge overnight.

  • The next morning, take the dish out about 30 minutes prior to baking.

  • Preheat the oven to 180°/160° fan forced.

  • Bake the covered food in the oven for about 25 minutes.

  • Uncover, sprinkle liberally with some cinnamon sugar, and bake a further 15 minutes or so, or until the centre is firm and the surface is lightly brown.


  • cut and serve with some warmed maple syrup.
