Baileys Butter
The other week I saw a Christmas pudding at half price in my local health store. The festive season must be over, but I love Christmas pudding any time of the year, so quickly snapped it up. While there might have still been a pud left over on the shelve, there was no brandy butter to with it, so I decided to make my own. Only with a twist. Switch the brandy for a bit of Bailey's and you have a lovely liqueur butter. As well as going on Christmas pudding, you can pour it on all kinds of desserts, fry fruit in it, and when it cools and left to set, it is delicious spread on toast. To get the butter back to a runny sauce, just pop it in the microwave for thirty seconds.

Makes: 6 servings
Ingredients
250g soft brown sugar
125g butter
3 tbsp Bailey's Original Irish Cream
ΒΌ tsp nutmeg
Method
Melt the butter in a saucepan.
Stir in all the other ingredients until dissolved.
Bottle up, and drizzle over whatever you like.
