Bailey's Chocolate Guinness Cake

This is a recipe I have adapted from an existing recipe. It is perfect for a birthday, St. Patrick's Day - or for a special someone who is a lover of all things Irish!

Preparation Time: 30 minutes
Cooking Time: 25 minutes
Makes: around 8 servings



1 cup flour
2 tablespoons cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
4 tablespoons butter
1 cup granulated sugar
1 cup Guinness
1 teaspoon vanilla extract
1 large egg


1 cup (2 sticks) butter
3 cups confectioner's sugar
3 to 4 tablespoons Bailey's Irish Cream


Preheat oven to 350°F. Grease one 8-inch round cake pan.
In a medium bowl, sift the flour, cocoa powder, baking powder, baking soda and salt.
In a medium saucepan over medium-high heat, melt the butter.
Once melted, stir in sugar. Remove from heat and let cool for around five minutes.
Whisk in the Guinness and vanilla extract. Quickly beat in egg until combined. Whisk in dry ingredients until the mixture is smooth.
Pour batter into prepared pan and bake for 25-30 minutes.
Let cake cool in pan until completely cool, then transfer to a plate and apply the frosting.


Cream butter in the bowl or a mixer until it is light and fluffy.
Add Bailey's Irish Cream and beat until combined.
Add confectioner's sugar 1 cup at a time, mixing thoroughly at each addition.
Transfer frosting to a piping bag, and pipe along the top of the cake.

Serve immediately or store in an airtight container.
