Baingan Ka Bharta Egg Plant Mash

One of the classic and delicious North Indian recipes.

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Makes: 4 servings

Ingredients
1 large baingan ( brinjal / egg plant)
2 tbs oil
5 chopped onions
3 chopped tomatoes
3-4 garlic cloves
1 tbsp red chilli powder
1 tbsp coriander powder
Chopped fresh coriander leaves

Method

  • Roast the brinjal on a medium flame or heat it in the microwave for 10min, until it is cooked well and the skin is charred completely.

  • Take 2 tbsp of oil in the frying pan and heat it.

  • Fry the onions until they turn a golden brown colour.
  • Add the chopped tomatoes and garlic and then mix through the onions.

  • Add 1 tbsp red chilli powder and coriander powder and stir it until the masala has cooked completely and oil rises to the surface.

  • Add the mashed brinjal, mix it well and cook it for 5 min on a low flame.

  • Garnish it with finely chopped coriander leaves and serve hot with Chapatti or Butter Nan.
