Baingan ka bharta

Baingan ka bharta always tastes good with a smoky flavour. 

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 2 servings

Ingredients
1 big Eggplant / Brinjal / baingan
1 onion finely chopped
1 green chilli finely chopped
1 tsp ginger-garlic paste
1/3 tsp cumin seeds
1/3 tsp mustard seeds
Pinch of asafoetida
1/2 tsp turmeric powder
1/2 tsp chilli powder
1/2 tsp coriander powder
1/3 tsp garam masala
few coriander leaves
salt as per taste
2 tsp oil


Method
● Wash the eggplant. Rum some oil on it and roast it on the gas in medium heat.
●Keep turning the eggplant so that it doesn’t get burnt  until its fully roasted.






●Take out the skin and finely chopped it.




●Heat the oil in a pan and add cumin seeds, mustard seeds, ginger-garlic paste then sauté for a minutes.

●Add onion and chopped chilli till they get brown burnt in colour.





●Add turmeric powder, chilli powder, coriander powder and garam masala and sauté for a while.





●Add eggplant and sauté for 5 minutes in medium heat.





●Add coriander leaves and sauté for few minutes.





● Serve hot with chapattis and steam rice.
