Baked Apple Sliders

Two slightly bruised and aging green apples sitting lonely in the fridge, some seeds and rice malt syrup was all that was needed to make these healthy and quick baked apple sliders. A sprinkling of ground black pepper enhanced the apples with a distinctive umami taste.

a great way of using bruised or aging apples.


Preparation Time: 5 minutes
Cooking Time: 10 minutes
Serves: 2

Ingredients
2 Green apples
2 Tablespoons mixed seeds (pepitas, sunflower seeds, pine nuts)
1 Tablespoon ground black pepper
1 Tablespoon rice malt syrup
Greek yoghurt to serve (optional)

Method
  • Slice apples finely and layer onto a baking tray.

  • Finely slice the green apples.


  • Place apples into a pre-heated 200°C oven and bake for 10 minutes.

  • Bake the apple slices for 10minutes in a preheated oven.


  • Remove the apples from the oven and while hot, start to layer a serving plate with the apple slices.

  • Sprinkle the pepita, pine nuts and sunflower seeds over the apple slices, then drizzle a little of the rice malt syrup over the seeds.

  • Layer the apples with seeds and rice malt syrup.


  • Continue layering with apples, seeds and rice malt syrup until you have used all the apple slices and have created a small stack of 3-4 layers.

  • Grind a liberal amount of black pepper over the last layer of nuts.

  • Serve while still warm and garnish with a large dollop of Greek yogurt and an drizzle of rice malt syrup.
