Baked Artichoke and Feta Dip

This was a hit at a recent dinner party, with one of the guests raving about it for hours afterwards. The feta and artichoke combine beautifully together, with strong, creamy flavours that are enhanced by the oregano and garlic.

It makes a wonderful entrée served with crackers and cut up carrots.



Preparation Time: 10 minutes
Cooking Time: 25-30 minutes
Makes: 4-6 servings

Ingredients
400g can artichokes
100g low fat feta
1 cup Greek yoghurt
1 clove garlic
Handful fresh oregano
Pepper

Method
  • Preheat the oven to 180°C.
  • Drain the can of artichokes. Roughly chop the artichokes and the feta into 1-2 cm pieces. Place in a mixing bowl.




  • Finely dice the garlic. Pick the oregano leaves off the stems and roughly chop. Add the garlic, oregano and yoghurt to the mixing bowl. Season with pepper and stir until combined.




  • Line a small baking tray with baking paper. Spoon in the artichoke mixture and flatten the surface. Place in the oven for 25-30 minutes, or until the mixture has solidified.



  • Serve immediately.
