I love banana chips, well that is I loved them until I discovered they are fried. I know I was upset too. This seemingly healthy snack is turned into fried junk food. On top of that there is added sugar and preservatives, no wonder they are so ludicrously yellow.
I abandoned eating banana chips until I saw a recipe for baked banana chips. They are not as yellow and do take a bit of time to make, but they are amazing!
It’s crucial that the temperature is spot on (any lower and it will take forever and any higher, they will burn). Also use just-ripe bananas and cut to 1/8 inch pieces. It is important to try and get them uniform. Or some will be dark and others soft.
Yum, I just made some of these, before I read this article. I didn't cook mine for as long as you indicate in your recipe, so they were probably much softer than yours. They were still yummy though. I love bananas, raw or cooked!
