Baked Bean Soup

I was at a restaurant when first tried this. They called it minestrone, but it was not really a minestrone it was more like baked beans with risoni and vegetables in it. I did however like the taste and decided to try make it at home and here is what I have come up with.

A generous serving of baked bean soup.


Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 4 bowls

Ingredients
[ADVERT]1/4 cup of risoni
1 carrot thinly sliced
1/4 of a cauliflower
2 cups of vegetable stock
1/2 cup red kidney beans
2 Roma tomatoes diced
1 can of baked beans

Method
  • Cut cauliflower into small pieces and add to saucepan with the carrot and risoni.

  • Bring to boil and turn down to low to simmer.

  • Vegetables and risoni cooking in the stock.


  • When the risoni is almost cooked add in baked beans, kidney beans and tomato.

  • Stir in the beans and the tomato.


  • Stir soup over low heat until beans are warmed through.

  • Season with salt and pepper to taste.

  • Garnish with fresh herbs and serve immediately.
