Baked Brie with Mango Chutney
This is rich and delicious and probably unhealthy, but such a comfort food! AND it does have a lot of calcium!
Made from a round of Brie, it is an unusual entree which, if you are making it for visitors, you would buy a large round of Brie. I used a 125 g one as I was eating it as a meal at night after going out for lunch.
I have never baked it before as I always thought it would just melt as it got hotter, however it did none of this, and kept it's shape beautifully!
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 2 - 4 as entre
Ingredients
1 round Brie
About 2 tsp mango chutney
Slivered almonds
½ to 1 small red apple
Biscuits, or bread to serve
Celery, cucumber, optional, to garnish
Method
Preheat the oven to 180°/160° fan forced and put some baking paper onto a small baking tray.
Peel the paper off the Brie and put the uncut round onto the baking paper.
Spread the chutney on the top, leaving a small edge where the almonds will go.
Place the almonds around these empty edges - it does not matter if they go onto the chutney a bit, as mine did.
Bake for 15 minutes.
Taking care, transfer the brie to a cheese board.
Cut the apple into slices and then cut each slice in half again - I always use this apple slicer as it gives nice, even slices.
Arrange the apple slices around the Brie, and cut in half.

You could also add some thickly sliced French bread to the board, however I used celery and cucumber as these are healthier.
I also added a few cracker biscuits.
A delicious taste sensation of rich cheese with the tart apples and chutney!
