Baked Brunch Egg in a Bread Roll with Chips
It was Sunday morning and I felt like something different. I always have a cooked breakfast on Sunday which includes my much loved egg.
I have tried various variations on making an egg but had not tried it baked in a roll before, and I was pleasantly surprised.
Easy to prepare, it tasted great and was something a bit different and could be assembled beforehand if you are having visitors for breakfast or brunch.
Preparation Time: 10 minutes
Cooking Time: About 20 minutes
Makes: 1 serving
Ingredients
1 crusty bread roll
1 large egg
1 tsp chives
1 tsp thickened cream
1 tsp Parmesan cheese
Salt and pepper
1 large potato (optional)
Method
Microwave the potato for a minute or two till it is starting to soften.
Let it cool a bit, and slice.
Melt some butter in a small pan and when it is hot, add the potatoes.
Continue cooking them till they are brown on both sides.
Meanwhile, slice the top off the roll and gently remove the bread in the middle until there is a hole large enough to fit an egg into.
Put the roll on baking paper on a tray, and crack the egg into it.
Add the chives and the cream.
Add salt and pepper to your taste, and sprinkle with the grated Parmesan.
Bake at 180°/160° fan forced until the egg is starting to set - this should take about 15 minutes.
Put the top of the bread roll next to it and bake for a further 5 or so minutes.
Butter the inside of the top of the roll, put it on the egg, add the chips, and eat!
