I have always said I can't cook chicken. I am always so worried it won't be cooked inside so I overcook it. I made this recipe up from scratch 100% and it works, it's moist and definitely not overcooked.

Baked Chicken Breast with Roast Potatoes and Garlic
Preparation Time: 10 minutes
Cooking Time:50 minutes
Makes: 2 servings
Ingredients
1 chicken breast
5 tablespoons of tomato paste
3 tablespoons of thickened cream
1 teaspoon of minced garlic
1 tablespoon of chopped coriander
1/4 of a red onion finely diced
3 small potatoes washed and peeled
3 sprigs of rosemary
3 cloves of garlic
1 tablespoon of olive oil
Salt and pepper to taste
6 brocoli florets
6 carrot sticks
Extra rosemary sprigs to garnish
Method
Line a baking dish or baking tray with alfoil.
Place chicken breast in the dish and season with salt and pepper rubbing it on both sides.

Season chicken with salt and pepper to taste
Add tomato paste, garlic, onion, cream and coriander to a bowl and mix well.
Spoon sauce over the chicken making sure it is well covered.
Cut potatoes into quarters.
Tear the rosemary into smaller pieces.
Peel the cloves of garlic, cutting any large ones in half.
Add potatoes, garlic, rosemary and olive oil to a bowl.
Season to taste with salt and pepper and toss to coat the potatoes.

Toss potatoes and garlic with the olive oil and herbs
In another alfoil lined dish add potatoes, garlic and rosemary.
Place potatoes on the top shelf and the chicken breast on the bottom.
Take chicken out of the oven and cut in half.
The sauce on top will have dried out a little so spoon some more on top of each piece.

Sauce will dry out like this
Place chicken back into the oven and continue to cook for a further 20 minutes.
Steam the carrot and brocoli until desired softness is reached. 6 minutes is good for slightly soft.
Take chicken and potatoes from the oven and start to assemble on your plate.
Place one half of the chicken pieces on each plate.
Add half the carrots, half the brocoli and half the potatoes on each plate.
Add half the garlic too, some people like to eat it. For me I like to rub it on my potatoes.
Mix the leftover sauce still in the dish from the chicken, and spoon some over each piece of chicken.
Garnish with a sprig of rosemary and your done.
