Baked Chicken Breast Wrapped Around Feta, Olives, And Wrapped In Crisp Prosciutto

This recipe would be a great one to impress your visitors.

Although it looks complicated, it is surprisingly easy to make, and does not take a lot of work or time.

The taste is excellent as the proscuitto goes nice and crisp when cooked and the three ingredients inside the chicken are a fantastic combination.

Preparation Time: 20 minutes
Cooking Time: 25 minutes
Makes: 3 - 4 servings

2 large chicken breasts
60 g feta cheese, cut into small cubes
6 black olives, pitted and chopped
4- 6 sun dried tomatoes, chopped
4 - 6 slices prosciutto or parma ham

Preheat the fan forced oven to 170°.

Get the feta, olives, and sundried tomatoes ready.


Cut a large pocket in the chicken breasts, cutting as close to the edge as you can without piercing the edges.


Put the feta mixture into the chicken, making sure you push it right into the corners.


Pull the chicken up to close it as much as possible


Wrap the prosciutto around each chicken breast, enclosing the breast as you do.

This will help keep the filling inside the chicken

Put on the grid of a roasting pan or I did it on the one that was in the oven, and covered the base with foil so I would not have to wash it.

Bake for 25 - 30 minutes -the prosciutto should be crisp by then.

Do not bake longer or chicken will be tough

While this is baking boil your rice and I have used red rice

Slice the chicken breasts as they look much nicer served up that way.


Serve with rice and I also had plain rocket, however it would also be nice with pasta and salad.
