Baked Chicken Loaf With Apricots And Spring Onions

This chicken mince loaf has the addition of dried apricots in it.
I was a bit sceptical about how the two ingredients would work together, however the taste was actually unusual and very pleasant.

I could taste the flavour of the dried apricots slightly, and I found it a very interesting taste -also there are a lot of spring onions in this.

I used this brand of mango chutney as it has large pieces of mango in it, which also enhances the flavour of this loaf.

The chicken was very smooth, and in this case I used Panko bread crumbs. It is a loaf that is equally enjoyable hot or cold and works great on sandwiches.

I served it with tomato and rocket salad, as well as chips done in the oven and without oil.

Preparation Time: 10 minutes
Cooking Time: 45 minutes
Makes: 4 servings

500 g chicken mince
50 g breadcrumbs (I used Panko)
60 g spring onions, chopped
2 tbsp parsley, chopped
2 tbsp dried apricots
1 tbsp mango chutney
1 small egg
1 tsp salt
¼ tsp pepper


If making chips, peel two potatoes and cut them to the shape you want. Microwave them for about 3 minutes at most.

Preheat the oven to 180° or 160° fan forced.

Chop the dried apricots.

Chop them to about this size

In a large bowl mixed the chicken mince, breadcrumbs, parsley and spring onions.


Add the apricots, chutney, egg, salt and pepper. Mix a bit, and then knead with your fingers until it becomes smooth -about 2 - 3 minutes.

Put baking paper in a small loaf tin (about 22 x 6 cm) and put the mince mixture in.


Bake in the oven for about 45 - 55 minutes, at the same time putting the chips in on a flat tray lined with baking paper. Spray them lightly with a cooking oil to stop them from sticking to the paper.

Leave the loaf in the tin for at least 5 minutes and then lift out with the baking paper. Slice as thin or as thick as you like, and serve.


Serve with the chips and I also made a salad.
