Baked Chorizo Potato Frittata

This frittata can be eaten hot or cold


Frittata is basically a filling and more interesting omelet. This frittata is baked in the oven and can be enjoyed warm or eaten cold and enjoyed on a summer's day picnic.

Preparation Time: 20 minutes
Cooking Time: 25 minutes
Makes: 4 - 6 servings

Ingredients
6 eggs
300g potato
1 large onion
50g chorizo
100ml single cream
Large pinch of salt
2 tsp mixed dried herbs
6 tablespoons olive oil
100g grated cheddar cheese
1 tablespoon grated parmesan (optional)

Method
  • Preheat your oven to 180 degrees C.
  • Peel and dice the potatoes into cubes approx 1cm in size.
  • Boil the potatoes for 5 minutes then drain.
  • Finely slice the onion and gently fry in 3 tablespoons of olive oil.
  • Dice the chorizo and add to the onions when they are almost cooked. This will release the full flavour of the chorizo without it getting too crisp.

  • Sweat the onions in the olive oil and then add the chorizo


  • Whisk the eggs.
  • Add the cream, dried herbs and salt to the eggs and mix thoroughly.

  • Whisk the eggs and then add the cream, herbs salt


  • Add the potatoes, onions and chorizo to the egg mixture.
  • Heat 3 tablespoons of olive oil in a 25cm saucepan (one with a metal handle which can be put in the oven).
  • When the oil is hot, add the egg mixture and give it a quick stir to make sure the potatoes are evenly distributed.

  • Add the extra mixture to a hot frying pan


  • Sprinkle over the grated cheese and place in the oven for 25 minutes.

  • Grated cheddar and parmesan taste great but you could also try feta cheese


  • Once you remove it from the oven, allow it to cool for 5 to 10 minutes before sliding onto a chopping board and cut into slices.

  • Golden and bubbling frittata straight from the oven


    I have a fussy toddler but this was a winner with him this lunchtime. Just remember to go easy on the salt if you are giving this to children or avoid it completely.
