For a while I was looking to find some recipes that use kale, and then I was lucky enough to find such a recipe in a supermarket food catalogue. This one bowl meal is a healthy way to enjoy breakfast or lunch.

Ingredients
75g kale
5 cherry tomatoes
1 egg
100g onion
½ small aubergine (eggplant)
¼ tsp chilli flakes
1 tbsp lemon juice
1 tbsp coconut oil
Method
Slice the tomatoes, onion, and aubergine.
Fry with the kale and chilli flakes in coconut oil with the lid on until the kale has wilted.
Pre-heat oven to 180 ༠C/ 160 ༠C fan/ 375 ༠F/ 5 Gas.
Pour the mixture into an oven safe bowl and create a well in the centre.
Crack the egg and slip it into the well.
Bake in the oven until the egg has set.
