Haloumi cheese is a salty cheese that can be fried without it melting - it holds it's shape after grilling, baking or frying. I love it in just about everything so decided to bake some fish with haloumi on top, to give the fish extra taste.

Ingredients
1 lemon, sliced into about 10 very thin slices, pips removed
4 pieces of white fish fillets
Garlic powder, to taste
2 tsp tomato paste
60 g haloumi cheese, cut into about 6 thin slices
Method
Preheat the oven to 230°/210° fan forced.
Cut four pieces of baking paper big enough to wrap each piece of fish in.
Spread about ½ tsp oil on each piece of baking paper.
Place 4 overlapping slices of the lemon on each piece of paper.
Add the fish on top of the lemon slices, sprinkle the garlic powder and some pepper on top.
Add the tomato paste evenly on top of each piece of fish.
Put the haloumi slices on top of this
Fold the edges of the baking paper together to make a parcel.
Put these parcels on an oven tray and bake for about 15 minutes.
Remove from the oven and leave them for a few minutes.
Unwrap, taking care not to burn yourself as you open them, and serve.
I served it with a "bell apple", some raw broccoli and parsley.
