Baked Fish With Mushrooms In Sour Cream Sauce
Fish is always a healthy option for any meal.
I have used snapper in this recipe as I find it is not a very strong fish and blends in very well with other ingredients.
I have made it a bit more interesting by adding chips, mushrooms, sour cream sauce, and topping it off with cheese. The crispy chips are a very good combination with the other ingredients and frying them first ensures they stay crisp.
This is then baked in the oven to become a very tasty meal.
Preparation Time: 20 minutes
Cooking Time: 35 minutes
Makes: 2 - 3 servings
Ingredients
½ kilo snapper
1 tbsp plain flour
About 3 tbsp butter
1 or 2 hard boiled eggs, sliced
150 g mushrooms
400 g potatoes
SOUR CREAM SAUCE
1 tbsp butter
1 tbsp plain flour
½ cup milk
½ cup sour cream
4 tbsp grated cheese
Method
Preheat oven to 160° fan forced.
Dip the fish slices in flour and fry on both sides for a few minutes in 1 tbsp of the butter.
Place in a buttered ovenproof dish or Corning Ware.
Put the egg slices on top of the fish.
Slice the mushrooms and fry them for a short time in about 1 tbsp of the butter. Spoon them over the eggs.
Peel and slice the potatoes and fry in the remaining butter until golden brown on medium -high. Place around the fish.
Sprinkle with salt and pepper if desired
For the Sour Cream Sauce -Melt the butter, add the flour and cook 1 - 2 minutes. Gradually add in the milk, stirring until it thickens. Lower the heat and continue stirring until the sauce is thick.
Stir in the sour cream and season to taste. Continue stirring until it thickens again. Pour over the fish, then cover all the ingredients with the grated cheese.
Bake in the oven for about 20 minutes or until the top is golden.
Serve with any type of salad.
