Ingredients 4 large potatoes, peeled and grated (About 4 cups)
1 medium onion, grated
½ cup milk, or skim milk
¼ cup margarine or butter, melted
¼ cup sour cream (you could use light)
3 tbsp fresh chives
½ cup Parmesan cheese, grated
Fresh chives, for garnish
Preheat the oven to 190°/170° fan forced.
Spray a shallow 2 litre rectangular baking dish with cooking spray, or line it with baking paper.
Mix the grated potatoes, onion, milk, butter, sour cream, chives and about 1/8 tsp of salt.
Mix this well.
Spoon the potato mixture into the prepared dish, and sprinkle the Parmesan over the potatoes.
Cover the dish with foil, and bake for about 30 minutes.
Take off the foil, and bake until it is golden and heated through - about 25 minutes.
