Makes: 2 servings
Ingredients
2 whole mackerel
1 tsp garlic granules
1 tsp ground ginger
Half tsp black pepper
1 tsp dried thyme
1 tblsp olive oil
2 handfuls of kale
Method
Grease a sheet of foil with oil and all of the seasoning.
Fillet the fish and slice in half. Rinse the fillets out with water and press (flesh side down), into the seasoned sheet.
Wrap the foil around the fillets and place in the oven for 30 minutes at 180 degrees/gas mark 4.
Wash the kale and place in a saucepan of simmering water for 10 minutes.
Remove the fish from the oven - it should be white in colour and tender.
Once cooked, plate up kale first.
