Delicious browned potatoes, baked at a high temperature in the oven, mixed with chicken, bacon and cheese - a delightful combination!
Preparation Time: 25 minutes plus 10 minutes marinating

Ingredients
250 g chicken breasts, cubed
2 large potatoes, cubed
2 tbsp olive oil
¼ tbsp paprika
½ tbsp garlic powder
¾ tbsp hot sauce (or to taste)
¾ cups cheese, grated
About ¼ cup bacon, chopped
¼ cup spring onions, sliced
Method
Preheat the oven to 230°/210° fan forced.
Mix the olive oil, some salt and pepper, paprika, garlic powder and the hot sauce.
Add the cubed potatoes to this mixture and allow to marinate for about 10 minutes.
Drain the potatoes, keeping the sauce.
Spray a baking dish with cooking spray.
Spread the potatoes over the baking dish and bake in the hot oven for 40 - 45 minutes, making sure you stir them every 15 minutes.
Meanwhile, while these are baking, fry the pieces of bacon and set aside.
Using the bacon fat left in the pot, brown the chicken cubes and add them to the sauce left over from the potatoes. Coat the chicken in this sauce.
When the potatoes are cooked, put the chicken pieces on top and bake for about 8 - 9 minutes.
Layer the grated cheese, bacon, and ¾ of the spring onions on top of the chicken.
Bake for about 3 minutes or until the cheese is melted.
Serve with the rest of the spring onions on top.
I served it with edamame beans, lettuce and avocado.
