Baked Pumpkin Risotto

Are you in the mood for risotto but don't have any time to dedicate to making it? Here is a quick and easy baked risotto which is perfect for those nights when time is limited.


Preparation Time: 10 minutes
Cooking Time: 45 minutes
Serves: 6-8

Ingredients
2 cups arborio rice
4 cups chicken stock
120 g butter
700 g pumpkin, peeled, deseeded and diced
5 rashers bacon, diced
1 onion, diced
200 g mushrooms, sliced
75 g tasty cheese, grated
2 tbs parmesan cheese, grated (to serve)
salt and pepper, to taste

Method
  • Preheat oven to 190C and grease a large baking dish.
  • Melt the butter in a fry pan over medium heat, then add the the bacon, onion and mushrooms. Cook until the onion is soft and the bacon is starting to crisp.

  • Place all the ingredients into the baking dish and mix well to combine. Bake for 35-40 minutes until rice is cooked.


  • You could change this easily by adding broccoli, chicken or cauliflower.
