Baked Ricotta with Roasted Pears
This unusual combination of food would be good as an entre or light meal, however I ate it as a main meal with some cabbage and pickled vegetables.
Easy to make, it is something very unusual, and I ate both of these as a main.

Preparation Time: 10 minutes
Cooking Time: 40 minutes
Serves: 1 - 2 as a main
Ingredients
1 Pear, sliced into about 8 pieces
½ tbsp olive oil
½ tbsp white balsamic vinegar
½ tbsp sugar
200 g ricotta
About ½ cup Parmesan, grated
½ tbsp oregano
½ tbsp lemon zest
1 small egg, lightly beaten
Sage leaves
Cabbage - optional
Method
Preheat the oven to 200°/180° fan forced.
Put the pear, vinegar, sugar, oil and some salt and pepper on a baking tray, and toss to mix up.
Bake for about 20 minutes, or until the pears are going a golden colour.
Mix the ricotta, Parmesan, lemon, oregano, egg, some salt and pepper to taste, in a bowl. Stir well to combine them.
Put this mixture into two ½ cup, lightly oiled ovenproof dishes.
Put these on a baking tray and bake for about 15 minutes or until set.
Turn them out when cool enough, being careful they do not break - run a spatula or knife around the edges first.
Arrange some sage leaves on the top (optional), and I served this meal with raw cabbage leaves and home made pickled vegetables.
