Baked Salmon and Fried Rice
Baked salmon served on a bed of fried rice tastes absolutely divine.
Preparation Time: 45 minutes
Cooking Time: 60-85 minutes
Makes: 4 servings
Ingredients
4 pieces of salmon
2 handfuls of rice
3 eggs
1 bottle Masterfoods Soy and Garlic Marinade
1 can diced capsicum (250g)
1 can corn kernels (250g)
1 can peas (250g)
5 slices of bacon
Method
For the Salmon
Place the pieces of salmon into a deep baking tray.
Spread about 1/2 a bottle of soy and garlic marinade over the pieces of salmon, enough to cover it with a thick coat.
Place the baking tray in the fridge and leave for about 40 minutes, with the occasional flipping of the pieces every 10 minutes so that the marinade can seep through.
Preheat the oven to 180 degrees celsius.
Place the baking tray into the oven and cook for about 30 minutes util the salmon has cooked through.
Make sure you flip the salmon pieces at 10 minute intervals so that both sides cook evenly.
Leave in the oven (after switching off the oven) and keep warm.
For the Rice
Fill 1/3 of a saucepan with water and bring it to boil.
Place 2 handfuls of rice into the saucepan and cook the rice as per the instructions on the packet.
In the meantime, whip up 3 eggs and cook in a frying pan to make them scrambled.
Place in a bowl and leave aside.
Next, cook the bacon pieces (that are chopped up) until they are crispy.
Now, add the rice into the frying pan (once it's been cooked through), along with the bacon, scrambled eggs, mushrooms (finely chopped), peas, corn, and capsicum.
Cover the pan and cook the rice mixture until it becomes soft.
Serve on a plate by creating a bed of rice.
Place the salmon pieces over the bed of rice and enjoy.
