Baked Salmon Patties

Spice up your next burger night with these salmon patties. They're easy to make (hey, why not have a night off and get the kids to make them?), as well as healthy and delicious.

They're packed with ingredients health practitioners rave about: salmon, quinoa flakes, eggs, lemon, garlic and coriander, meaning protein, vitamins, antioxidants, fibre and omega 3 galore.

The patties also work well served with a side of pasta or veggies or as finger food, topped with a dollop of Greek yoghurt and chives.



Preparation Time: 10 minutes
Cooking Time: 20 - 25 minutes
Makes: 8 patties

Ingredients
1 can pink salmon
1/2 cup quinoa flakes
2 eggs
1/4 cup fresh coriander
Juice of half a lemon
1/2 small onion
1 shallot
1 garlic clove
Chilli powder

Method
  • Preheat the oven to 200°C. Line a baking tray with baking paper.

  • Drain the salmon and place in a large bowl. Beat the eggs in a small bowl and add to the salmon.

  • Roughly chop the coriander and finely chop the onion, shallot and garlic. Add to the bowl with the remaining ingredients and stir well.



  • Shape into patties and place on the baking tray.



  • Place in the oven for 20-25 minutes, turning the patties over halfway through.
