Baked Salmon with Anchovy and Cherry Tomato

An easy mid week dinner that looks as good as it tastes

Preparation Time: 5 minutes
Cooking Time: 25 minutes
Makes: 2 x servings

2 x fresh salmon fillets
8 cherry tomatoes
1 x small tin of anchovy fillets in oil
Kitchen foil

Pre heat the oven to 180 degrees
Cut off 2 x squares of kitchen foil that are big enough to generously wrap each piece of salmon
Place each salmon fillet lengthways in the centre of each piece of foil
Criss cross anchovy fillets on top of each salmon fillet
Wash the cherry tomatoes, pat dry and line them up alongside the edges of each salmon. You can leave them whole or chop them in half to ensure they line the length of the fish
Pour a teaspoon of the oil from the anchovy tin over each piece of salmon then discard the rest
Package up each piece of foil as if you were wrapping the salmon like a present
Place in the middle of the oven and cook for 25 mins
Be very careful when you open the foil not to burn your hands. Liquid will have stored in the foil and you may serve the salmon with or without this, depending on taste
Serve with roasted vegetables (such as butternut squash) and freshly steamed broccoli
