Baked Salmon with Vegetable Stir fry
Fresh, vibrant and delicious - this is a great meal for the whole family. We flake the salmon for any little ones at the table, to ensure there are no bones inside and to make eating easier.

Cooking Time: 20 minutes
Serves: 4
Ingredients
4 salmon fillets
2 tbsp soy or tamari sauce
2 tsp sesame oil
2 tbsp lemon juice
2 garlic cloves
2cm knob fresh ginger
1 red onion
1 handful snow peas
1 handful green beans
3 bok choy
2 tbsp soy or tamari sauce
1 packet rice noodles
Method
Mix together the soy sauce, sesame oil and lemon juice in a shallow dish. Add the salmon fillets and place in the fridge for 30 minutes to marinate.
Preheat the oven to 190°C (375°F).
Remove the salmon from the fridge and place skin side down on a baking tray.
Place the tray in the oven for 20 minutes, or until cooked to your liking.
Meanwhile, mince the garlic and ginger. Finely slice the red onion and roughly chop the snow peas, green beans and bok choy.
Heat some oil in a wok or large pan over a high heat. Add the garlic, ginger and onion for a minute, then the snow peas, green beans and bok choy. Cook for a few minutes or until cooked through. Stir through the soy sauce.
At the same time, cook the noodles according to the packet instructions.
Serve the noodles in your bowls. Top with the stir fry, and then with the salmon. Serve immediately.
