Baked Spiced Chicken

This is a lovely dish for lazy cooks. It's quick to put together, pop it in the oven for 20 minutes and it's done. While it's a really simple recipe, it tastes just great. It's also a very flexible dish and lends itself well to variations such as additional spices. One large chicken fillet is enough in our household but if you're not serving sides of vegetables (or you're hungry) you might like to use two and adjust the other ingredients to taste.

Preparation Time: 5 minutes
Cooking Time: 20-30 minutes
Makes: 2 servings

1 large chicken fillet
1 teaspoon French mustard
1/2 teaspoon curry powder
40 g butter

Cut the chicken fillet into large slices

Place chicken slices in ovenproof dish, smear with the mustard

Sprinkle the curry powder over the chicken


Dot with butter

Bake in 180 degree C oven for 20-30 minutes or until chicken is cooked through. Turn once during cooking.

Serve with boiled rice or mashed potato to catch the juices and with some vegetables on the side.
