Ingredients 2 whole bass or bream, cleaned and gutted, heads and tails removed
2 or three spring onions, finely chopped
A Couple of chopped tomatoes
A handful of chopped parsley
A couple of knobs of butter
Salt and pepper to taste
Preheat the oven to 180°/Gas 4
Dry the fish, inside and outside, with some kitchen towel.
Lay each fish on a square of aluminium foil.
Open up the fish and fill with the chopped spring onion, tomato and parsley.
Season inside and outside and dot the outside with the butter.
Wrap in the foil and bake in the oven for about 25 or 30 minutes.
