Baked Syrup Sponge Pudding

Syrup sponge pudding is British old school puddings at their best: warm, comforting and utterly delicious. This baked version is quicker and easier than the traditional steamed recipe but it's just as good, producing a light springy sponge with a sweet, indulgent topping.



Preparation Time: 10 minutes
Cooking Time: 35-40 minutes
Makes: 8 generous servings

Ingredients
250g golden syrup
5 tbsp breadcrumbs
200g butter, softened
200g golden caster sugar
3 medium eggs
200g selfraising flour
5 tbsp milk

Method
  • Preheat oven to 180c, 160c for fan ovens. Pour the golden syrup into the base of a 1.5 litre baking tray.



  • Sprinkle the breadcrumbs into the syrup and mix in.



  • Mix the butter and sugar in a bowl until you fully combined into a fluffy mixture.




  • Add and beat the eggs to the sugar and butter. For best results, add and beat one egg at a time.



  • Sift in the flour and stir in slowly to produce a thick, doughy mixture.



  • Pour in the milk, and stir thoroughly.


  • Dollop the mixture over the syrup and then bake in the oven for 35-40 minutes, until the top is golden and springy.




  • Best served warm with custard or cream.
