Baked Tuna Salad

Salads are usually cold or warm, and I can't say that I am a big fan of either; but this baked salad makes a delicious and healthy hot meal. Based on the brands I used, each portion is about 209 calories.

Preparation Time: 40 minutes
Cooking Time: 30 minutes
Makes: 4 servings

Ingredients



360g new potatoes
2 tins of tuna steak
125g asparagus
240g sun dried tomatoes
100g green olives (or black if you prefer)
80g mixed salad leaves (I used rocket, spinach, and watercress)

Method
  • Pre-heat oven to 200 & #3872 ;C/ 180 & #3872 ;C fan/400 & #3872 ;F/6 Gas.



  • Peel and chop the potatoes and asparagus, then put them in the bottom of a roasting dish.



  • Mix in the tuna, olives, and sun dried tomatoes, then layer the salad leaves on top, and bake in the oven.
