Baked Tuna Salad
Salads are usually cold or warm, and I can't say that I am a big fan of either; but this baked salad makes a delicious and healthy hot meal. Based on the brands I used, each portion is about 209 calories.
Preparation Time: 40 minutes
Cooking Time: 30 minutes
Makes: 4 servings
Ingredients
360g new potatoes
2 tins of tuna steak
125g asparagus
240g sun dried tomatoes
100g green olives (or black if you prefer)
80g mixed salad leaves (I used rocket, spinach, and watercress)
Method
Peel and chop the potatoes and asparagus, then put them in the bottom of a roasting dish.
Mix in the tuna, olives, and sun dried tomatoes, then layer the salad leaves on top, and bake in the oven.
