Bakwan is an Indonesian style vegetable fritter. It's one of my favourite starters from Singapore. There are many varieties of bakwans but this recipe is the most common type of bakwans found in Singapore.
Preparation Time: 20 minutes
Cooking Time: 10-15 minutes
Makes: 4 servings
Ingredients
2 cups shredded cabbage
1 cup grated carrots
1 cup thinly sliced onions
1 cup corn kernels
1/2 cup spring onions
plain flour as needed ( approx 1 cup)
2-3 tablespoons cornflour
oil for frying
For the paste
1 onion
1 candle nut (candle nut is an Indonesian nut that looks like a hazelnut,commonly used in Indonesian cooking)
2-3 properly washed coriander roots
salt and pepper to taste
Method
Make a paste with all the ingredients for the paste.
Mix the vegetables and the paste together in a bowl.
Add the cornflour some plain flour and few drops of water as needed spoon by spoon making sure the batter is not too runny.
Heat oil in a deep frying pan.
Drop a spoon of the batter in the hot oil to check if it falls apart. If it does just add more flour.
Shape and fry in batches. Serve hot with thai chilli sauce.
Tip - If you cannot find candle nuts they can be substituted with Cashew nuts or Macadamia nuts or Brazil nuts.
