Balinese Salmon
A friend recently returned from a trip to Bali, Indonesia where she told me about the light and delicate flavours used in many fish dishes. Inspired, I created this fresh, zingy meal that turns simple fillets into an East Asian delight.
Preparation Time: 5 minutes
Cooking Time: 25 minutes
Makes: 2 servings
Ingredients
2 salmon fillets
4 asparagus spears
150g garden peas
Corriander
Lemon Thyme
Black Pepper

Method
Wash the salmon and place in a bowl.
Add the seasoning stage by stage to the salmon.

Olive oil and Lemon
Once seasoned turn the salmon over so the flesh is 'face down' into the oil mix. Place in the fridge to marinate and infuse for at least an hour.
When ready, place the salmon on a sheet of foil.
Season with pepper, wrap the foil around the fillets and place in the oven for 20 minutes at 200 degrees/gas mark 4.
Black Pepper
Wash the garden peas and place in a sieve on top of a saucepan of boiling water.
Cover with a lid for 15 minutes.
Remove the lid and repeat process with the asparagus.
'Pop' the peas out of their shell by applying gentle pressure to the pods.
Halfway through cooking time check on the salmon, place back in the oven for the remaining 10 minutes.
Once everything has cooked plate up the fish and vegetables for a light meal that can be enjoyed for lunch or dinner.
