Banana Muesli Sourdough Bread

This delicious bread is an original recipe by Paul Hollywood, but I tweaked it slightly so that the ingredients only make one loaf. Our family could never get through two loaves in time. I also used wholemeal flour instead of white, because I think it has so much more flavour, and has all the goodness still in it. Based on the brands I used, each slice should be about 137 calories.

Preparation Time: 7 hours (with pre-made starter)
Cooking Time: 40 minutes
Makes: 1 loaf

Ingredients
500g wholemeal bread flour
300g starter
200ml water
150g fruit muesli
10g porridge oats
2 bananas
1 tsp light soya milk
1/2 tsp salt

Method



  • Mix the flour, salt, and muesli together.







  • Mash the bananas and mix into the flour.





  • Mix in the starter so that a dough starts to form.
  • Gradually add the water to bring the dough together.





  • Knead for ten minutes, then prove for about six hours or until doubled in size.
  • Pre-heat your oven to 200 & #3872 ;C/ 180 & #3872 ;C fan/400 & #3872 ;F/6 Gas.
  • Make six slashes across the dough, a bit like a windmill.



  • Brush the dough with milk, then sprinkle the porridge oats on top.
  • Bake in the oven.
