Ingredients
3 bananas
50g ground almonds
160g cashew nuts
2 tbsp runny honey
70g yoghurt
4 eggs
2 tsp vanilla extract
Method
Pre-heat the oven to 190 ༠C/ 170 ༠C fan/350༠F/6 Gas.
Put 12 cashew nuts to one side.
Slice the bananas, and then blitz in a food processor with all the other ingredients to form a smooth mixture.
Pour the mixture into 12 cupcake cases, and place one cashew nut on top of each one.
