Banana Apple and Oat Cookies

These banana, apple and oat cookies are soft, moist, and taste like sweet apple pie. They almost have a muffin like consistency, enjoy one with a cup of tea or grab 3 or 4 for a great breakfast on the run.

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes:14 cookies

Ingredients
1 very ripe banana
1 apple
1 tsp vanilla essence or vanilla bean
2 tbsp coconut oil
1 egg
¾ cup wholemeal SR flour
1 tsp cinnamon
1 cup rolled oats
2 tbsp honey



Method
  • Preheat oven to 190C. Line a baking tray with baking paper.

  • In a bowl place the oats, wholemeal flour and cinnamon then mix.

  • Crack the egg into another bowl and whisk lightly, add the oil, honey and vanilla then add the wet ingredients to the dry and mix.



  • Fold in the mashed banana and peeled, cored and diced apple.

  • Using your hands form little cookie sized rounds, flatten a little with a fork and place on the lined baking tray.



  • Bake for 20 minutes or until the cookies start to bronze. Cool on a wire tray and enjoy for up to 5 days.
