Banana Berry Icecream

Healthy, paleo, dairy free, refined sugar free and DELICIOUS. I eat a version of this almost everyday. I switch the berries with other fruits, nuts, peanut butter dip , cocoa or chocolate chunks but you always need the frozen banana as a base. It is so quick to whip up and really has the texture or icecream.

Preparation Time: 2 minutes
Makes: 1 Bowl

Ingredients
1-2 Frozen bananas
1/2 C blueberries
1/2 C raspberries
1/4 C almond milk
1 TBSP sunflower seeds
2 TBSP PB2 or Walnut Butter



Method
  • Put the frozen bananas and berries into a blender.



  • Pour in the milk as it is blending.

  • Scoop into a bowl and top with sunflower seeds and ready made PB2 or nutbutter of choice.

  • Bowl of heaven


  • Eat your 'icecream' immediately.


  • Notes:
    Add whatever toppings you like, chia seeds, honey, yogurt and chocolate are all great options.
    Try adding a handful of spinach whilst blending for an extra healthy boost.
    PB2 is powdered peanuts, when mixed with water it becomes peanut butter but has half the calories and fat.

    I bulk freeze bananas whenever they are ripe to ensure I always have icecream on hand.
