Banana Bread

This is my personal favorite way to make banana bread. Just by adding a few different ingredients than your average banana bread, you can make it much more flavorful and creamy.

Preparation Time: 25 minutes
Cooking Time: 48 minutes
Makes: 12 servings (1 loaf)
Preheat oven to 375 degrees

Ingredients
2 cups flour
1/2 tsp baking powder
1 tsp baking soda
1/8 tsp salt
2 tbsp cinnamon
1/2 tsp nutmeg
5 ripe bananas
2 eggs
1/2 cup vegetable oil
1 tsp vanilla
1/2 cup sugar
4 oz cream cheese (optional)
1/2 cup chopped walnuts (optional)

Method
  • In a large bowl, mix together flour, baking soda, baking powder, salt, nutmeg, and cinnamon. Set aside
  • In a medium bowl, blend bananas until mashed. Then beat in eggs with bananas. Pour in vegetable oil and vanilla, then mix. Mix in sugar until well blended. If desired, blend in cream cheese. If desired, stir in walnuts.
  • In large bowl with flour mixture, make a well in the middle of bowl, and slowly pour in banana mixture from medium bowl. Stir together until there is no dry flour.
  • In a greased a 12 X 4 X 3 dimension loaf pan, pour in batter and smooth until evenly proportionate. Place in preheated oven, and let bake until well done.
