Banana Bread With Benefits

This isn't your regular banana bread. It packs a punch with added healthy goodness that will get you raring for an action packed day!

Preparation Time: 15 minutes
Cooking Time: 45-50 minutes
Makes: 8 servings

Ingredients
1 cup organic wholemeal plain flour
3 over-ripe organic bananas, mashed
1/2 cup organic wholemeal self raising flour
125gr of either coconut oil or butter melted & cooled
1 tsp ground cinnamon
1/2 cup coconut sugar (can substitute with brown sugar)
2 free-range organic eggs, whisked
1/2 cup of shredded coconut
OPTIONAL SUPER POWER EXTRAS
1/4 cup Medjool or regular chopped dates
1tbs chia seeds
2 tbs finely chopped walnuts or pecans
2 tbs cacao nibs.
2 tbs cranberries



Method
  • Preheat oven to 180°C. Grease and line the base and side of an 11 x 21cm x 6cm deep (base) loaf pan.

  • Combine flours, coconut, sugar and cinnamon & any of the optional dry ingredients (dates, chia seeds, cacao nibs, cranberries, chopped nuts etc) in a large bowl.

  • Whisk butter and eggs together. Stir in banana.

  • Combine the wet ingredients with the dry well and spoon into the prepared pan. Smooth the surface.

  • Bake for 45-50 mins or until a skewer inserted into the centre comes out clean.

  • Set aside in the pan for 10 mins before turning out onto a wire rack.

  • Serve warm or cold.
