Banana Cake with Cream Cheese Frosting

Banana cake takes me back to my childhood, my mother would make this as a special treat for our family and I now make it as a special treat for my own family.

Preparation Time: 10 minutes
Cooking Time: 35 minutes
Serves: 10

Ingredients
Banana Cake
1/2 cup butter
1/2 cup sugar
1 tsp vanilla essence
2 eggs
3 bananas, mashed
1 1/2 cups SR flour
1 tsp bi carb soda
50 ml milk

Cream Cheese Frosting
125 g cream cheese
50 g butter, room temperature
1 1/2 cups icing sugar mixture
1 1/2 tsps milk

Method
  • Preheat oven to 180C. Grease and line a 20cm round cake tin.
  • Beat the butter, sugar and vanilla. Mix in the eggs and banana.
  • Add the flour, bi carb and milk. Beat for 2 minutes.

  • Pour the mixture into your prepared tin and bake for 30 - 35 minutes.

  • Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  • Once the cake has cooled, prepare your frosting by beating the cream cheese and butter until well combined.
  • Add the icing sugar and beat until combined. Pour in the milk and continue beating until pale and creamy.

  • Spread the cream cheese frosting over the top and/or down the sides of the banana cake before serving.
