Banana and caramel are such a good combination, and this tart is not a complicated one to make.
I served it with thickened cream, and it was devoured by my visitors!

Makes: 6 - 10 servings
Ingredients
PASTRY
90 g butter
2 tbsp caster sugar
1 egg
1½ cups plain flour
½ tsp baking powder
FILLING
2 tbsp plain flour
1 cup brown sugar
2 egg yolks
375 ml
Evaporated Milk
2 tbsp butter
½ tsp vanilla essence
2 bananas
lemon juice
Whipped or thickened cream (optional)
Method
Preheat the oven to 165° fan forced or 180° not fan forced.
Cream the butter, sugar and add the egg, then beat well.
Add the flour and baking powder and mix until it becomes a firm dough.
Roll out this pastry to line a 23 cm pie plate or similar.
Bake for 15 - 20 minutes. Cool
FOR THE FILLING
Combine the flour and sugar in a saucepan.
Gradually add the egg yolks and Carnation evaporated milk.
Add the butter and stir over a moderate heat until boiling, and it has thickened.
Remove from the heat and stir in the vanilla. Allow to cool.
Spread half the filling onto the cooled pie shell.
Arrange the sliced bananas on top.
Spread with remaining filling -no more cooking required!
Serve with thickened or whipped cream -be prepared to eat two lots as it is so delicious!
