Banana Chia Pudding

This is another low sugar, low calorie dessert that is great for those needing to keep blood sugar levels down, or those on a diet.

There is no cooking involved so not only is it a delicious dessert, but it is also healthy and easy to make.

Preparation Time: 10 minutes plus overnight standing
Cooking Time: No cooking needed
Serves: 4

Ingredients
1 large banana
½ cup milk
½ cup yogurt
1/3 cup chia seeds
1 tbsp maple syrup, or honey
Plum, mandarin, or other fruit to garnish

Method
  • Mash the banana well with a fork.

  • Add the milk, yogurt (you COULD use all milk) and honey.

  • Add the chia seeds and stir thoroughly.


  • Put a lid or glad wrap over the dish, and put in the fridge overnight.
  • Chia seeds will swell and take in the liquid


  • Serve it as, or with yogurt or with toppings.

  • It will last about 3 - 4 days in the fridge, and you can vary what you serve it with.
  • I served it with some apple sauce on the third day
