Banana Cinnamon and Macadamia French Toast

This is an easy, sweet and slightly healthier variation of french toast, perfect for Sunday morning brunch.

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 4 servings

Ingredients
3 eggs
3/4 cup milk
1 tbsp icing sugar extra for dusting
1 tsp vanilla essence
1/2 tsp ground cinnamon
4 slices thick-cut white bread
2 bananas
2 tsp butter
1/4 cup macadamias, toasted
Maple syrup, to serve

Method

  • Pre-heat oven to 180 degrees.

  • Beat eggs, milk, icing sugar, vanilla and cinnamon in a large bowl until combined.



  • Soak bread in egg mix, 1 min on each side.



  • Heat 1 tsp of the butter in a large fry pan until melted. Add soaked bread and cook on each side until golden.



  • Slice banana thinly and chop macadamias roughly.



  • Once all bread is cooked, top with banana and macadamias, drizzle with maple syrup and dust with icing sugar. Serve warm and enjoy!
