Banana Coconut Bread
Is there really anything more tantalising and comforting than the smell of homemade banana bread being baked?
This gluten, sugar, and dairy free spin on the irresistible staple proves that you can still have your cake and eat it - without worrying about the guilt or stodge that comes with commercial versions.

Makes: 8 servings
Ingredients
1/2 cup oats
1/2 cup rice flour
1/2 cup quinoa flakes
1 cup desiccated coconut
1/2 tsp bicarb soda
2 cups mashed banana
1/2 cup coconut oil/ olive oil
2 tbsp chia seeds (mixed with 6 tbsp water)
3 tbsp crushed walnuts
2 tbsp ground LSA
Method
Preheat oven to 175C.
In a large mixing bowl, combine the oats, rice flour, quinoa flakes, coconut, and bicarb soda until well assimilated.
Pour the chia seed mixture into the bowl and stir through thoroughly.
Continue to stir, and then add the mashed bananas, mixing consistently.
Transfer to a lined loaf pan (feel free to make as muffins alternatively), and spread out evenly.
Top with the walnuts and LSA to give the bread a nutty, crunchy top, and then bake for about an hour, or until a skewer inserted comes out clean.
Move to a cooling rack once baked, and serve either warm or cool. This bread can also be toasted and drizzled lightly with maple syrup, or easily frozen for days when you need a healthy pick-me-up!
