Ingredients 125 g cottage
1 cup dates, pitted
Peel from ½ mandarin, grated
4 egg whites
3 small ripe bananas, mashed
1 very small apple, grated
1 tsp vanilla
2 tbsp walnuts, chopped
1½ cups wholemeal SR flour
1 tsp bicarb of soda
Preheat the oven to 175°/155° fan forced, and grease a 20 cm cake tin - I used one with a ring in the middle but had problems with it sticking.
Put the dates and mandarin peel in a food processor and mince finely - make sure you take pips out first, as I forgot!
Add the cottage cheese and continue till it is quite smooth.
Beat in one egg white at a time.
Add the mashed bananas, apple and vanilla, and then the walnuts.
Sift the flour and bicarb of soda, and fold this through the mixture gently.
