Banana Loaf Cake

A simple banna loaf cake that has a beautifully browned crunchy outside and a moist, full flavour centre.



It's delicious served warm, as an afternoon cake or as a pudding with custard or ice cream.



Preparation Time: 10 minutes
Cooking Time: 35 minutes
Makes: 14 servings

Ingredients
2 ripened banana
6oz butter
6oz caster sugar
2 eggs
4oz self raising flour
Squeeze of lemon juice

Method
  • Grease a 10 inch loaf tin and preheat oven to 160c.
  • Cream the butter and sugar in a mixing bowl.

  • Mash the banana and then add to the creamed sugar and butter. Thoroughly mix in using a fork or spoon.

  • Add the lemon and then slowly add and mix in the beaten egg. Make sure the mixture is fully combined by mixing thoroughly.
  • Fold in the flour and then pour the mixture into the loaf tin.


  • Cook for 35 minutes until the top is golden and springy.

  • Turn the cake out onto a board, the base will be crisp and a dark gold colour.
