Banana Loaf Cake

A simple banna loaf cake that has a beautifully browned crunchy outside and a moist, full flavour centre.



It's delicious served warm, as an afternoon cake or as a pudding with custard or ice cream.



Preparation Time: 10 minutes
Cooking Time: 35 minutes
Makes: 14 servings

Ingredients
2 ripened banana
6oz butter
6oz caster sugar
2 eggs
4oz self raising flour
Squeeze of lemon juice

Method
Grease a 10 inch loaf tin and preheat oven to 160c.
Cream the butter and sugar in a mixing bowl.

Mash the banana and then add to the creamed sugar and butter. Thoroughly mix in using a fork or spoon.

Add the lemon and then slowly add and mix in the beaten egg. Make sure the mixture is fully combined by mixing thoroughly.
Fold in the flour and then pour the mixture into the loaf tin.


Cook for 35 minutes until the top is golden and springy.

Turn the cake out onto a board, the base will be crisp and a dark gold colour.
