Banana and Milo; these are the two breakfast essentials found in most Australian homes. Bananas are high in nutrients including vitamins, minerals, fibre and antioxidants. They are your best fruit source for vitamin B6 and contains natural sugars perfect for all taste buds. Milo is a popular drink high in calcium, iron, and various vitamin Bs. This is a recipe that combines the two to make the perfect breakfast, lunch or snack for the kids and the kids at heart.

Makes: 8 servings
Ingredients
50g unsalted butter, softened
1/2 cup caster sugar
1 egg
80ml milk
1 cup plain flour
40g milo powder
1 tsp baking powder
1 medium sized banana
Method
Cut banana into 8 slices.
Using a fork, mash the remaining banana.
Beat butter and eggs together. Set aside.
In a large bowl, sift the flour and baking powder together.
Add the sugar and combine
Add half the dry ingredients into the butter egg mixture and stir to combine.
Add half the milk into the mixture and stir to combine.
Add the dry ingredients and milk into the mixture alternatively until all remaining ingredients are used.
Stir in the mashed bananas.
Spoon the mixtures into cupcake pans or a greased muffin tin until 3/4 full.
Place a slice of banana on each muffin.
Transfer to a wire tray to cool for 2 minutes and serve warm.
