Banana Oat Bars

This is a healthy snack made with those overripe bananas you can't find a use for. There is no added dairy or eggs, and you can substitute any kind of nuts or fruit that you like. They are so easy to make, even the kids can help.



Preparation Time: 10 minutes
Cooking Time: 30 minutes
Serves: makes 8

Ingredients
2 very ripe bananas
1/2 tsp. vanilla extract
1/2 tsp. cinnamon
2 tbs. honey
1/4 c. dried cranberries, chopped
1/4 c. nuts, chopped
2 c. rolled oats

Method
  • Preheat the oven to 180 degrees and line a 20 cm x 20 cm slice pan.
  • Peel the bananas and mash them in a large bowl.
  • Add the other ingredients and combine well.



  • Spoon the mixture evenly into the pan and press down, smoothing the surface.



  • Bake in the oven for 30 minutes until golden.



  • Allow to cool in the pan for 10 minutes, then carefully remove and cut into 8 bars.
  • Drizzle with melted chocolate or icing if desired.
