Banana Pancakes

A squashed, bruised banana doesn't need to go in the bin; just whip up some of these tasty treats. They're sweet, so you (or your kids) can have them for a snack, or just as a special breakfast. The natural ingredients mean they even suit Paleo and gluten-free diets (just make sure you get the right baking powder).



Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 4 pancakes

Ingredients
1 banana
2 eggs
3 tbsp desiccated coconut
1/3 cup almond meal
1/2 tsp baking powder
1/2 tbsp vanilla essence
Olive oil (for pan)



Method
  • Mash the banana in a bowl.

  • Add the other ingredients and mix until smooth.

  • Just mixing with a fork is fine


  • Pour the mixture into a pan that's been heated to a medium temperature.



  • Flip each pancake when the base is firm (the edges will be visibly hard and the middle may be bubbling).

  • You can see the bottom right pancake going brown around the edges




  • Remove pancakes from the heat when they're cooked through.
