Banana & Raspberry Muffins

The first time I found out that the average muffin is somewhere between 300-400 calories, I was shocked. There is no need for them to be that calorific, and with a few modifications, you can make them a heathy and delicious treat. Using an extra banana allows you to cut half the fat, and give them extra flavour, while wholemeal flour makes the muffins more nutritious. Based on the brands I used, each muffin is about 92 calories.

Preparation Time: 20 minutes
Cooking Time: 20 minutes
Makes: 15 servings

250g wholemeal plain flour
250g raspberries
50g margarine
2 bananas
1 egg
3 tsp Truvia sweetener (or 175g caster sugar if you prefer)
1 tsp vanilla extract
1 tsp bicarbonate of soda

Pre-heat oven to 180 ༠C/ 160 ༠C fan/350 ༠F/4 Gas.

Cream the margarine with the sweetener/sugar, and then beat in the egg.

Mash the bananas, and then mix them in along with the raspberries.

Fold in the flour and bicarbonate of soda.

Spoon the mixture into muffin cases and bake.
